Bad News. Good News.

Hi again! I usually don't blog more than once a day, but I'm bored and Jamie's taking a cat nap. So here we go!

Bad News:

I have planned my meals for the next 3 or 4 weeks starting like a month ago, and tonight was a total and utter flop. I found an easy recipe for skillet enchiladas on the Internet and ooo buddy. No thank you. Jamie liked them (thank goodness), but I thought it was a big pile of cheesy, flavorless, slop. More bad news. My stomach is killing me. Stupid dinner. It was just gross. I rarely make homemade Mexican food except for queso, and now I know why. I'll just go to El Mezcal down the street from now on. Boo hiss.

Good News:

Good news needed to happen today to make up for the yucko mucko dinner. Do I sound dramatic, or what? I just really like food and when it goes awry, I'm not a happy camper. Me and my stomach are still upset about din din. Anyhoo, earlier this afternoon, I made homemade granola thanks to Julie from www.pbfingers.com. She writes a food blog which I read daily. I really like her and think she's got some good recipes. It gets a little redundant and boring at times, but I like her healthy recipes. So, I tried out the granola recipe she posted, and it was really good. Gooder (new word) news!! Jamie liked it too! Here's the recipe for all of you who like granola:

  • 1/2 cup dried apricot, cut into pieces
  • 1/2 cup slivered almonds
  • 1/2 cup chopped walnuts
  • 1/2 old fashioned oats (not the instant kind)
  • 1/2 cup honey
  • 4 tablespoons melted butter
  • pumpkin pie spice
  • cinnamon
  1. Mix apricots, nuts and oats together in a bowl.
  2. Combine melted butter and honey together and pour over the nut mixture. Mix it really well.
  3. Spread mix all over a greased baking sheet.
  4. Liberally shake pumpkin pie spice and cinnamon all over the mix.
  5. Try a bite to see if it is good. If not, add more spice or cinnamon.
  6. Bake at 350 degrees for 12 minutes.
  7. Take it out of the oven and stir it around.
  8. Put it back in the oven for about 8 more minutes or until it begins to look golden.
  9. Take it out of the oven and put it in a container immediately or it will stick to the pan.
  10. Put it in the fridge for a little bit to harden or just eat it right then and there :)

I read almost every day how good nuts are for you, so I wanted a yummier way to eat them without simply eating them raw, because that's boring. Try this recipe, and feel free to share some of your own!
