Easy Pork and Veggie Recipe

Good day, my friends!

I hope everyone had a lovely weekend and are ready to start the week off with a bang! I started my morning off by sleeping in a little bit and started on some laundry. As much as I love having Mondays off, I hardly just get to chill. I do laundry, deep clean everything, vacuum, sweep, mop, dust, etc...bummer. It's all good stuff and I actually enjoy cleaning, but it's hardly a day off.

Good news is that I get to spend my Mondays with this little lady:
Be jealous that I get to wake up to that face on the daily. It's a pretty sweet start to the day.

In other news, my Memphis bestie, Emily, had her sweet baby boy last week! Baby Ethan Douglas Black was born last Monday at 8 pounds, 13 ounces, perfect, healthy and beautiful!
So happy for Phillip, Emily and baby Ethan! Can't wait to hold that bundle of preciousness and hug my sweet friend! Love you guys!

Last week, I made one of my favorite and easiest meals: Pork roast with veggies in the crock pot. It's easy, delicious and healthy too! Perfect combination!

Here's what you do:
*Get a pork roast or pork tenderloin and throw it in a crock pot. You can spice it up however you please, but I don't do anything to it since I usually use a really yummy sauce/marinade.
*Chop up a bunch of veggies and throw those in there as well. This time, I used sweet potatoes, mushrooms, and carrots. But I've thrown in celery, potatoes, zucchini, beans, peas, and whatever else you have on hand. It's like doing a pot roast where there are pretty much no rules. Just throw in what sounds good! It's a great way to add in a bunch of veggies to your meal.

And then I pour this bunch of deliciousness all over the top of the pork and veggies:
I've used all kinds of sauces, but this one is my favorite and can be found at Target. I've used regular pork marinades, different BBQ sauces, spices sauces, mild sauces and more. You can try different meats, different veggies, different sauces and more! Just try a bunch of different combinations to see what you like the most bestest :)

Here's what I came home to last week:
Hot, goopy, flavorful, healthy pork roast and veggies:
Sometimes I just make biscuits to go along with this, but since there was a lot of juice, I cooked up a pot of whole wheat egg noodles to go with the pork roast. You can also use rice, corn bread, biscuits, whatever you like :) They're all yummy, but some kind of "starch" is good to soak up the yummy juices.

I hope you'll try it sometime, because it is yummorific!

Another favorite of mine is this:
Two whole wheat Eggo waffles with 1 tablespoon of Nutella with strawberries and bananas. (By the way, any time I spell the word, "bananas", I have to sing that Gwen Stefani song. "This s*** is bananas! B-A-N-A-N-A-S!") Anyone else have to do that? Just me? Okay.

Well, this is like a power breakfast for me and I love eating it before a good, hard workout! It's a big breakfast with not a ton of calories, believe it or not, but it's full of nutrients, and good stuff for an energizing meal! Try it sometime. You'll feel like you're indulging in a mighty way, but you're not being too naughty :)

Also, did all of your Facebooks blow up this Saturday over the "brooms standing up by itself because of the earth's tilt" craziness?!?! Well, I came home for lunch and tried it, making Jamie take a picture of me and my magic. He looked it up and learned that it has nothing to do with the earth's tilt and that you can actually stand a broom up by itself any time :)
It was fun to play with it anyway!

PS--Ladies, you BEST be watching The Bachelor: Girls Tell All tonight! Personally, I think it's the best episode of each season! Love it! I hate that Jamie has class, but it works out nicely that I can watch 2 hours of uninterrupted trash with Leia Lu.
