Easy Meals

Since I talked about food this morning, I thought I'd go ahead and talk a little more about food...my favorite subject!

This week, I've planned my dinners around ease. I'm a big fan of simple meals that are also delicious!

Here's the dinner plan this week:

Monday: Taco Salad
Brown some meat. Get taco seasoning and mix it in there with some water. Put an assortment of beans in there as well. We used black beans and pinto beans. I love beans! They're so awesome for you! We also put some corn in the mixture. Yum!
Here's how I made my salad: Romaine lettuce on the bottom, a handful of baked tortilla chips, crumbled up, diced cucumbers, and about 1/2 a cup of the meat/bean/corn mix. Easy din din!

Tuesday: Caesar Salad Sandwich
Get some kind of load of bread like ciabatta or Tuscan. This time, I used Tuscan bread. I cut it straight down the middle, speed some caesar dressing on both sides and baked it (cut side up) in the oven for 12 minutes at 385*. I diced up 2 chicken breasts and cooked it in a skillet. Here's how I built the sammich: Bread, romain, sliced cucumber, chicken, shredded parmesan. So good. Simple, delicious, fairly healthy. Yum.

Wednesday and Thursday: Pork Tenderloin
One of my favorite meals ever! It's one of those crockpot, fix it and forget it kind of meals. Get a big pork tenderloin or pork roast from the grocery. Throw it in a crockpot with whatever veggies you like! I chose sweet potatoes, carrots, shelled edamame, and mushrooms. Pick some sort of BBQ-ish marinade. I try to find this Raspberry Chipotle sauce (it's kinda hard to find) and I just pour it over everything, set it on low for 6-8 hours and enjoy a hot and yummy smelling meal when you get home! Yum! Add a slice of bread or a biscuit or something to go along with it if that suits your fancy. Oh yeah. This makes a ton! We'll eat it for 2 or 3 meals!

Friday: Greek Shrimp Linguini
I found this recipe in a Cooking Light magazine a few years ago and it's still one of my favorite recipes. Basically, it's whole wheat linguine, canned tomatoes, fresh tomatoes, sautéed shrimp, basil, red pepper flakes and feta cheese. Soooo good! Feel free to throw in whatever veggies you'd like in there too. I'll throw in shelled edamame tomorrow probably. So tasty!

Saturday, not sure on meals yet.

Sunday, I'm going out of town for the week, so I'm making Jamie a huge helping of steak stir fry to enjoy for a few days :) I'll tell you about my vaca later! But I'm stoked!

  1. Loving this Abby! Always looking for new simple meals to fix and I never think about doing a taco salad. I think I'll add it to next week's menu. :)
