Italian Salad Kick

Before I get to my yummy salad recipe, let me show you a few pics from my phone. 

This is Leia, with my flower travel pillow on the way to Tulsa a few weeks ago: 


Despite the "I hate my life" look on her face, she actually liked that pillow. She enjoyed resting her head on something cushiony rather than the center console.

Jamie sent me this picture a couple weeks ago and it still makes me smile:


I think I'd like to make this the wallpaper in my living room, because it would make everyone happy who comes to my apartment...all three of us...me, Jamie and Leia. Lame. Anyway, apparently, this is a baby chimp who thought the stethoscope was a bit chilly. It's yittle face absolutely kills me and I love it! Thank you, Jamie, for sending me such cuteness!

I took this picture of Lulu on Monday:


One of her favorite things in the world is warm laundry, straight out of the dryer. This was the perfect combo, because I washed all of our sheets, threw it in the laundry basket, and then threw on more sheets and blankets on top of her. She slept in there for about 2 hours. That's one happy pup. At least one of us likes laundry day.

Italian Salad

As I've mentioned before, I go on kicks. Food kicks, want kicks, workout kicks, tv kicks...lots of kicks. Until I absolutely kill it and get sick of whatever that kick is.

Most days for lunch, I usually make myself some sort of salad because I usually always have salad makings on hand. And I like to think I'm somewhat healthy...somewhat...

For the past few weeks, I've been on an Italian salad kick. So good.

Here's what my salad typically looks like:


And here is what I put in it: 
  • Romaine with a handful of spinach for some added nutrition
  • Sliced Peppercini's (these are soooooo good in a salad!)
  • Seasoned croutons (I grew up hating croutons until about 2 years ago. Now they're yummy to me.)
  • Chopped cucumbers
  • Whatever other veggies you have on hand--I like shredded carrots in here too
  • Girard's Olde Venice Italian Dressing (the great thing about the peppercini's is that you don't have to use a bunch of dressing. The peppers give the salad an excellent flavor!)
  • Shredded parmesan or crumbled feta cheese--your choice
Those are the mixin's for a really yummy and tangy salad! And so far, it hits the spot every time! I hope you'll make your own sometime, because it's really good and really filling and gives you really ucky breath. Sorry. Just pop in some gum or brush your teefers.
