BBQ Nachos

It's official. I'm a true Memphis gal. Jamie and I were introduced to bbq nachos during our first visit to Memphis, and oh my goodness, they are so good! So, I decided to be a true blue Memphisian (?) Memphian (?)...anyway...I made bbq nachos tonight! Soooo good! They're super simple, so everyone should make them for their next office party/sleepover/girls night/guys night/party/family din din/whatever! Either get a bunch of shredded pork from your favorite bbq place or make your own. I made my own and I'm so glad that I did. I made Paula Deen's recipe for shredded pork and oh sweet tastiness, it is good! I highly recommend it! (Recipe at the bottom). We put it over a bed of tortilla chips, put the pork on it and topped it with shredded cheese. You can also do like a cheese sauce. Yummy in our full full tummies! Try it! You won't regret it! Basically, if and when you come visit me in Memphis, I'll either make them for you or we'll go somewhere that has them :)

Shredded Pork Recipe:

Ingredients:

Dry rub:

2 Tbsp salt

2 Tbsp black pepper

2 Tbsp dark brown sugar

2 Tbsp paprika

1/2 Tbsp Cayenne pepper

4 pound shoulder pork roast (or pork butt or pork roast)

2 cups apple juice

1 cup apple cider vinegar

2 Tbsp Worcestershire

1/2 Tbsp liquid smoke

1/2 Tbsp garlic powder

Directions:

1. Mix the dry rub ingredients in small bowl. Sprinkle dry rub all over the pork roast, pressing into the pork

2. Cover with plastic and refrigerate for at least 2 hours.

3. Combine liquid ingredients and the garlic powder in a medium bowl and pour into a large Dutch oven. Place pork in the oven and tightly cover with aluminum foil then lid. Roast for 4 hours or until the pork is tender and you can shred it easily with a fork. (You can also put it in the crock pot, which is what I chose to do)

4. Brush the roast with cooking liquid every hour.

5. Remove from oven and let stand until cool enough to handle. Shred the pork with a fork or tongs into bite size pieces.

6. Make some nachos with this or put it on buns and have a sandwich!

Don't forget your favorite bbq sauce also!!
