Pina Colada Smoothie and Oatmeal Applesauce Muffins

Once upon a time...

Not long ago...

A blogger lied to her readers, saying she'd be back "tomorrow" for some more recipes. This blogger truly has done a whole lot of cooking and has spent a lot of time in the kitchen, but she's got this 14 pound, 5 month old little sweetie that takes up a lot of her time and brain power. She's got a really hot husband, too, that she likes to hang out with. She felt bad for lying to her bloggers, but wanted them to know she loves them desperately and appreciate their time spent here at "A Deeper Life". 

Confession: That blogger is me. A week ago, I shared with you in a blog post a few recipes that I made from my Pinterest boards and said I'd be back the next day. Lies. They're all lies. Sorry 'bout that. 

Almost every day for the past week and a half, I've been making new recipes. It's been fun! Today, I want to share with you 2 more recipes:
  1. Pina Colada Smoothie
  2. Oatmeal Applesauce Muffins
Let's start with the smoothie.

Unfortunately, I cannot find the link to this smoothie, because I deleted it from my Pinterest board....goes to show how not-so-fabulous it was.

In it was a cup of frozen pineapple, 1/2 a can of coconut milk, 1/2 a frozen banana, 1 cup of ice cubes. 




I had never bought coconut milk before, but it's a very creamy and thick texture. Who knew?


The smoothie was fine.

Just fine.

Nothing great. Nothing to write home about. If I were to make it again, I'd add a tiny splash of coconut extract. It was just missing some vital sweetness.

I did, however garnish it with some sweetened shredded coconut:


On a 1 to 10 scale, I gave it about a 5.

Pinterest fail.

Onto the next recipe!

These bad boys were awesome!!!

I love me some cereal. Like a lot. I love cereal! All kinds. Sugary, fibery, plain, exciting, cartoony...I love it all. But let's be honest, even the "healthy" cereal is not exactly the most nutritious. So I am trying to find some new breakfast ideas that do not include a bowl of carbs.

So I made these muffins and they did not disappoint!

As I was trying to take these pictures, Jamie (and Lucy) were trying to get in the way.

These muffins were dense and thick and filling and delicious! I would totally make them again. This recipe made 12 muffins and I ended up freezing them and heating them up in the microwave for breakfast. The only thing I'd change, is when I sprinkle the cinnamon/sugar on top, I'd use a toothpick or something and swirl it into the batter a little bit. But I totally recommend these.

So good.

So, all in all, I had a one win and one fail. I've made a few more recipes since then, and I'll tell you this much...they're all wins!! Good stuff!
