Pioneer Woman Beans and Cornbread and Angel Hair Pasta Recipe

This week, I am actually going to try some of the Pinterest recipes that I've had pinned for a while now.  Pinterest is such a fabulous time waster, but I am going to start utilizing it for my own good. Jamie does a lot of traveling, and instead of going out to eat or making a boring baked/sweet potato or salad when he's gone, I need to start making some healthy foods that will last me a few days. 

The first recipe I tried was Pioneer Woman's Beans and Cornbread. You can find the recipe here. When we moved to Lafayette, I kept seeing "red beans and rice" as an entree item at restaurants. I couldn't imagine having just beans and rice for a meal (fat American, I am), but then I had it at a Young Life meeting and it was delicious!! When I saw this recipe from The Pioneer Woman for pinto beans and cornbread, I knew I had to make it since PW knows no wrong in the kitchen. Let's be honest. So I made it the other night for me and Jamie, and it was delicious!! 

All it requires is:
  • dry pinto beans
  • bacon
  • water
  • salt
  • pepper
  • cornbread (homemade or store bought) 
I just bought Jiffy cornbread mix, but I want to try making it on my own sometime. I love me some cornbread. 

If you decide to make this, make sure you have a large enough dutch oven because the beans pretty much double in size. I learned that the hard way, so my beans were a bit dry due to the lack of room they had to grow in my pot. Don't be like me. 

Delicious and CHEAP meal for you people trying to save money in the kitchen! 


The other recipe I made was Angel Hair with Chicken Sausages, Tomatoes and Kale from "Bev Cooks". Here is the recipe. This is NOT a Jamie-approved meal because it is chicken sausage instead of "real sausage". And tomatoes and kale are two of the main ingredients. I made it last night and love love loved it!! The only different thing I would do is to add a can of crushed tomatoes when adding the cherry tomatoes to the pan. But this was a truly delicious pasta dish. I highly recommend it :) 

I have two other recipes I'm making tonight that I'll share with you tomorrow. It includes a smoothie and a muffin--super stoked to try them both!
