Apricot Chicken Recipe

Boy oh boy, you are NOT ready for this recipe that I'm about to give you! This is an Ervin family favorite and it will forever be one of my top favs! I remember asking my mom to cook make that sweet and sour, pinky-orangy chicken with the rice. I never knew it was technically called "Apricot Chicken", but who cares what the name is with a meal this good! 

Let's begin, shall we? 

Ingredients:
  • 1 Jar Apricot Preserves
  • 1 Bottle Russian Dressing (really hard to find!!! If you find it, buy a couple of bottles! But if you don't, then look up the recipe for Russian dressing--super easy. Also, Catalina, French or Thousand Island works just fine. I used Thousand Island this time, and it was perfect.)
  • 1 Packet Onion Soup Mix
  • Lemon Pepper Seasoning
  • Salt
  • Chicken drumsticks, wings, breasts, legs--whatever! I used a mix of chicken legs and wings (with the skin and bones), and a couple skinless, boneless chicken breasts. I really like chicken with the skin and everything, because we all know chicken skin is delicious, but I made a few skinless, boneless chicken breasts for me :) Get enough chicken to fill a casserole dish--8 ish pieces. 
Instructions: 
  1. Rub the lemon pepper and salt on all of the chicken pieces.
  2. Place in 9x13 casserole dish. 
  3. In a mixing bowl, mix together, Apricot preserves, Russian dressing and Onion Soup mix. 
  4. Pour mix over the chicken. 
  5. Marinate overnight (preferably) or for a couple of hours. 
  6. Bake uncovered at 350* for at least 1 hour (I baked it for about an hour and a half tonight). You can also bake it covered with foil for about an hour and 45 minutes. The last 30 minutes or so, take the foil off and cover the chicken with the sauce.

Oh my gosh, I could smell it walking down the hall of my apartment!! I was so excited to dig in! The best way to eat this chicken is over rice. I'm sure it'd be fine with egg noodles as well, but rice is truly delicious.
